Bottling is the loudest and most intense activity in the brewery. It requires at least three, and often as many as five, people. The bottles are placed on a conveyor belt, mechanically washed and dated, and filled with beer. Before each bottle is filled, it undergoes a dual evacuation process during which the air is evacuated from the bottle and replaced with carbon dioxide. The bottle is pressurized to the exact pressure of the beer in the holding tank, allowing the beer to fall into place without foaming. After the bottle is filled, it is capped and labeled. The conveyor belt carries the bottle to the end of the line, where it is pulled off, placed into a six-pack, and then finally into a case.
